On the slopes of the hamlet of Pouilly, Vers Cras stands apart from our other Premiers Crus through its soil: here the clay recedes and limestone dominates. Our vines of around 80 years occupy 1.10 hectares facing south to south-east, within this climat classified Pouilly-Fuissé Premier Cru in 2020.
Limestone, a school of precision
Clay-limestone soils drain quickly and force the vine to root deep into the rock. Chardonnay loses in opulence what it gains in precision: tension, purity of fruit, and that saline sensation on the finish that lovers of great white Burgundy seek out. The “cras” — stony, limestone ground, in Burgundian dialect — live up to their name.
A chiselled wine
Our Pouilly-Fuissé 1er Cru Vers Cras, aged 24 months in demi-muids, delivers a pure, vertical expression: a citrus nuance on the nose, a straight attack, a long, majestic, saline finish. It is our maritime Premier Cru: it excels with shellfish, crustaceans and fine fish, as well as delicate white meats. Cellar 7 to 10 years; serve at around 14 °C.
