Burgundy’s lieu-dit names often tell their geology: the “chailloux” are the stones. This historic climat of the hamlet of Pouilly, classified Pouilly-Fuissé Premier Cru since 2020, carries our roughly 70-year-old vines on 1.10 hectares of clay-marl soils.

Full south, gently

Facing due south at 200 metres, Aux Chailloux is our most sun-drenched climat. The grapes reach fine ripeness every year, balanced by the coolness of the clay-marl soils: it is this dialogue between sun and marl that gives the wine its instantly recognisable profile, ample and round without ever turning heavy.

A wine of amplitude and texture

Aged 24 months in seasoned demi-muids, our Pouilly-Fuissé 1er Cru Aux Chailloux combines roundness, notes of butter and hazelnut, then an expressive, mineral finish — the climat’s signature. This is the Premier Cru for generous tables: farm chicken in cream sauce, slow-cooked dishes, boldly flavoured cuisine. Allow 7 to 10 years of cellaring; serve at around 14 °C.
