Aux Bouthières is one of the four Premier Cru climats we farm in the hamlet of Pouilly, in Solutré-Pouilly. On 1.5 hectares of south-east-facing hillside, this lieu-dit shelters our most precious heritage: vines of around 90 years, planted long before the Pouilly-Fuissé appellation gained its Premiers Crus in 2020.
What 90-year-old vines give
A near-centenarian vine produces little, but it produces true: its deep roots seek water and nutrients in the marl, its modest yields naturally concentrate the fruit, and its steadiness smooths out the excesses of the vintage. On this climat’s remarkably fine clay-marl soils, the result is a dense, structured, subtly sun-kissed Chardonnay with a depth only very old vines can offer.
The estate’s cuvée
The Pouilly-Fuissé 1er Cru Aux Bouthières is our flagship: hand-picking with meticulous sorting, long pressing, then 24 months in new demi-muids — the only one of our Premiers Crus to see new oak, which the wine’s substance absorbs without ever being dominated. Density, nobility, mineral energy: a wine for long cellaring (7 to 10 years), served at around 14 °C, magnificent with pan-seared foie gras or boldly flavoured cuisine.
