The old vines of Pouilly

A mosaic of parcels aged 65 and over, across three exposures — the soul of the estate in a single wine.

Not all our vines go into single-parcel cuvées. Around the hamlet of Pouilly, 7.5 hectares of scattered parcels — all planted at least 65 years ago — provide the raw material for our Pouilly-Fuissé Vieilles Vignes, the estate’s emblematic cuvée.

The strength of the mosaic

These parcels spread across shallow clay-limestone soils, facing east, south and west. Each brings its own voice: the tension of the eastern vines, the generosity of the southern ones, the late freshness of the west. Blending smooths out the excesses of each exposure and delivers, year after year, a faithful portrait of the Pouilly terroir — the whole point of a blended cuvée alongside the single parcels.

Tailor-made ageing

Harvested entirely by hand, the old vines are aged for 12 months in a set of complementary vessels — foudres, demi-muids and stainless steel — which builds texture without marking the wine. The result: an airy nose, an ample, satin-textured palate, vibrant tension and a luminous finish. A Pouilly-Fuissé for 5 to 8 years of cellaring, as much at home with a poultry in cream sauce as with turbot or ceviche.
